Our Story
Since 2018, The Meddling Lime has been serving Mexican-style cuisine while nodding to the ingredients, flavors and culinary traditions of the Pacific Northwest. Respectfully “meddling”—finding harmonies between the two food cultures, striking a balance between inventiveness and approachability—owner and chef Josh Schimmel-Bristow has been establishing his own authentic tradition.
First opening in Sellwood-Moreland, The Meddling Lime quickly became a culinary standout and staple of the neighborhood. Josh organized the cart around a few simple ideas, which remain at its heart: cook with high-quality ingredients, deliver consistency and value with every dish, and always match it with friendly service.
Josh has cooked professionally for more than a dozen years, including stints at two Mexican restaurants and one as chef at the venerable Tasty N Alder.
