Since 2018, The Meddling Lime has been serving Mexican inspired cuisine while nodding to the ingredients, flavors and culinary traditions of the Pacific Northwest. Respectfully “meddling” and finding harmony between the two food cultures, striking a balance between inventiveness and approachability—owner and chef Josh Schimmel-Bristow has been establishing his own authentic tradition.
First opening in Sellwood-Moreland, The Meddling Lime quickly became a culinary standout and staple of the neighborhood. Josh organized the cart around a few simple ideas, which remain at its heart: cook with high-quality ingredients, deliver consistency and value with every dish, and always match it with friendly service.
Josh has cooked professionally for more than a fifteen years, including stints at various restaurants and as the chef of the venerable Tasty N Alder.
